Sunday Reset: Reading Outside & a Cozy Dinner In

Hi there, and welcome to this week’s Sunday Reset — a weekly check-in where I share what I cooked, what I read, and the little moments that made me feel good this weekend. If you’re seeking a bit of rest and ideas for living well (without overthinking it), you’re in the right place.

What I’m Reading

Broken Country by Clare Leslie Hall
I started this book and couldn’t put it down. It takes place on a sheep farm in the English countryside, which sounded picturesque. I’ve never been, but it’s on my bucket list. This book is filled with love, tragedy, and twists and turns. I finally finished it this Sunday and already want someone else to read it so I can talk about it.

What I Made

Dinner: Gluten-Free Chicken Parmesan
I lightly coated chicken in olive oil, gluten-free breadcrumbs, pan-fried it (avocado oil), then baked it with sauce and mozzarella until bubbly. You can also use dairy-free mozzarella shreds to make it cheese free. This is a time-consuming recipe that I save for weekends.

Dessert: Vegan Lemon Cookies from Savor the Spoonful

My mom makes this recipe often. It’s simple, not too sweet, and the lemon flavor makes it great for summer. They’re gluten-free and vegan.

A Reset Moment

I left my phone upstairs for the entire day and rarely checked it. After lunch, when my little one went down for a nap, I sat on a lounge chair with my book and read outside for over an hour while snacking on a bowl full of cherries. I enjoyed the sunshine and finished my novel while my eldest played in the yard. It felt so good to not have an agenda.

Want a mini phone break of your own? Read my post for how I reset with a simple phone detox. It’s a gamechanger for a slow weekend.

What I’m Watching

We are currently watching The Residence on Netflix. It’s a whodunit mystery that takes place at the White House. So far, so good! Have you watched it?

That’s it for this week’s Sunday Recap. I hope you’re finding small ways to slow down, too.

See you next Sunday,
