Love using roasted chickpeas as #glutenfree salad croutons! I roast them on 400 degrees with a little olive oil, salt, and pepper for 15-20 min (give them a shake while they are cooking so they roast evenly. 🥗

Anyone feeling a little stressed this time of the year? I love Christmas but it’s also a time when my calendar is packed, everyone is sick, credit card bills are high, and it seems there is not enough time to do it all. Today on my lunch break, I chose to meditate and it felt really good to reset. I keep a yoga mat and @sunday.citizen meditation pillow in my office (comes with these cute crystals) to encourage my practice. Sometimes we just need to take five.🧘🏻‍♀️

Last weekend I went on the most relaxing one day yoga retreat at @yogabarnnj. It was a day filled with gentle vinyasa in a heated barn, journaling, fire pit chats, plant-based lunch including @gutluvco probiotic beverages, time with sanctuary animals, sound healing and more. What a lovely way to let go and reset right before the holiday crazy.
