Lemon Meringue Smoothie

Are you ready for the most delicious lemon meringue smoothie recipe? It’s dairy-free, gluten-free, and incredibly refreshing. This recipe is packed with Vitamin C, protein, and healthy fats for a delicious way to start your day.

I haven’t been this excited about breakfast in a long time. Smoothies are a part of my daily wellness routine but I was growing bored of the same flavors every day. It’s summer so I decided to play around with lemons to make a creamy lemon meringue smoothie. I’ve been testing and tweaking this recipe over the past two weeks and I’m excited to share it with you.

The ingredients are simple and easy to find. It’s also dairy-free, gluten-free, and vegan making it suitable for a variety of diets.

For the Smoothie

This smoothie has 6 total ingredients

Lemon: I used both the juice and the zest of the lemon to ensure it had enough citrus flavor. You will taste the lemon in this recipe even with the added natural sweeteners. 

Banana: Banana helps to thicken and sweeten this recipe. 

Maple Syrup: A little bit of maple syrup helps to give the smoothie the extra sweetness needed to balance out the citrus. Use real maple syrup, not the processed stuff.

Frozen Mango: I added frozen mango to make the smoothie cold. Most of the ingredients on this list are at room temperature. You can also put the bananas in the freezer the night before but I never remember to do those things. 

Light Canned Coconut Milk: This ingredient helps to give the smoothie a “pie” texture. Recently, I’ve been opting for canned coconut milk instead of the non-dairy milk in the refrigerated section because they have fewer additives and preservatives. I prefer the light because it’s not at as thick as the full-fat coconut and makes for a more drinkable smoothie. 

Water: Adding a bit of water helps break through the smoothie’s thickness. 

Cashews: I added cashews for protein (and healthy fats). It also helps to thicken the smoothie. You can dial up and down as wanted. 

Lemon Meringue Smoothie Recipe

Here is the official ingredient list: 

  • Lemon Juice (1/2 Lemon)
  • Lemon Zest (1/2 Lemon)
  • 1/2 Banana
  • 1/2 cup Frozen Mango
  • 1/2 can Light Canned Coconut Milk
  • 1/2 cup of water
  • 1-2 Tbsp Maple Syrup
  • 1/2 cup Cashews

Lemon Meringue Smoothie Substitutions 

Coconut Milk: You can substitute regular coconut milk instead of the canned coconut milk and water combo. This will still achieve a similar consistency. I prefer the canned because there are fewer additives.

Mango: You can use extra banana instead of mango but I would suggest using frozen banana so the smoothie isn’t warm. 


Blend all ingredients in a high-powered blender until smooth. I make all of my smoothies in the Vitamix as it makes them super smooth.

I love this lemon meringue smoothie recipe because it’s so different from the berry, and tropical ones I usually make. It’s also packed with lots of healthy fats, protein, and Vitamin C. It’s simple to make, keeps me full, and is a delicious way to start the day. Plus, who doesn’t love dessert for breakfast?
